Welcome to Emily Goes Keto! My new food blog where I will share my favorite, easy, everyday keto recipes, along with tips and tricks to help you along your keto journey.
Let me start by introducing myself. My name is Emily Caruso and I have been a full time food blogger and freelance photographer for the last five years. My food blog, Jelly Toast, has been the place where I have been sharing my family’s favorite recipes since August of 2012.
For health reasons, including being pre-diabetic, I discovered the keto lifestyle in March of 2017 and began my keto journey the following month. You can read more about my health history on my about page.
Shortly after starting keto, I had the idea to start a keto food blog to share my newfound keto recipes. Food blogging is what I have known for the last five years so it was a perfect fit. However, I do have a track record for bailing on things after a short time, so I bought my domain name and sat on it for the last 9 months.
I made it through an epic trip to Disney World as well as a full holiday season sticking with my keto, so I knew I had found my long term path and was ready to commit to this blog.

What will you find on Emily Goes Keto?
Well, basically all things keto! Specifically, you’ll find my favorite go-to simple keto recipes with short ingredient lists and approachable methods. Recipes that are great for menu planning, awesome lunches throughout the week, and meals that will make your entire family happy – even the non-keto eaters.
I’m lucky to have an amazing family who has supported me during my transition to a keto lifestyle, but the fact is, I eat entirely keto and they don’t. I have successfully transitioned my family to eating much less sugar and processed foods and been increasing their intake of healthy fats. However, my kids and husband still enjoy whole grains, fruits, starchy veggies, and the occasional treat. Emily Goes Keto will be a place to help you take the guess work out of cooking keto friendly recipes whether you are the solo keto eater in your family or part of an entirely keto clan.
So…you will have two food blogs?
Yes! Jelly Toast will always be the amazing space that I share stories of my family, behind the scenes of my life, and all of the scrumptious traditional food that my family loves. Some is keto friendly and some… not so much.
I started Emily Goes Keto as a place for all of my keto recipes and tips. A place where we can learn and share together about how to live this keto life.
